Moist gammon (ham) shank braised in cola with BBQ beans & buns for him and new potatoes and greens for me

It's been a porky week at FW this week.  Tonight is no exception as the first thing I grabbed from the top of the freezer as I rushed out this morning was a gammon (ham) shank which had been YS'd.


Tonight I needed a supper that would be quick to assemble and eat during half time as Holland were playing Australia in the World Cup.  Holland is Himself's international team as he was living and working there when I met him.  I'm basically using a much smaller take on Nigella's Ham in Coke recipe.

I used:

1 x gammon shank (around 500gm)
1 litre of cola (budget range)

I served the shank with:

For Himself:  Half a tin of basic range baked beans with an additional teaspoon of BBQ sauce, the last few chips in the freezer, plus some reduced bread rolls and the rest of the left over mushrooms.  Additional... I forgot to mention he had two fried eggs last minute as he felt deprived of gammon.  Well, it cost £1.56 so I'm not splashing it around the plate!  ;)

For Me:  New potatoes and some YS asparagus (I honestly couldn't walk past a bunch for £0.60p today)

Method:

Place the gammon shank in a pot with just enough room to get a lid on and have the shank mostly immersed in liquid.  Add the cola and bring to a rolling boil.  Immediately lower the heat and put a lid on.  Give the shank 25 minutes per 500gm plus an extra 25 minutes.  Mine took 50 minutes to cook, I turned it over half way through as it wasn't quite covered by the cola. I then left it to cool in the dark liquor.  It remains moist and succulent and you can remove what you need to eat and save the rest for cold, or to reheat for lunch.

An easy peasy mid week supper for pennies which was moist and tasted delicious and yes, there is a sneaky blob of butter on my potatoes ;)

  1. just made this and its deliscous really moist, I held back some of the boiling liquid and reduced it down its cooling then will be frozen for to make bbq ribs in. the rest I freezing in big container as will reuse for next time.

  3. Absolutely! I have done this with smaller joints that fit into my slow cooker. Let me know how it goes :)
