Cheaty cauliflower cheese

It's not quite the same but it is a good substitute when time is tight or motivation is lacking





We had one of the left over chicken crowns from last night's River Cottage chicken curry.  I roasted it along with some new potatoes from my pots and runner beans given to me.  

I also had half a cauliflower waiting to be blanched and frozen and really wanted cauliflower cheese but I didn't fancy standing making the sauce in this heat.  

So I cheated!  I lightly steamed the cauliflower for 5 minutes then poured over half of a tub of reduced fat creme fraiche (double cream would be amazing but highly calorific here too) and a handful of mature cheddar.  Popped into the oven at 200C whilst the chicken rested and 20 minutes later my cauliflower cheese craving was satisfied!  Easy peasy :)
