1: Breakfasts, Cheese and bacon eggy bread breakfast

This makes a tasty change from a toasted sandwich and works equally well for breakfast or lunch.


This is the first recipe in my series of breakfast/brunch recipes.  Let me know if you try this and like it (or even if you don't).



Serves 2

Ingredients:

  1. 4 slices of your favourite bread (thick is best)
  2. Enough 1cm thick cheddar to cover two slices of bread
  3. 4 rashers of your favourite bacon
  4. 2 eggs, beaten and in a shallow bowl
  5. Oil to fry

Method:

Grill the bacon until cooked and divide onto two slices of bread, place the sliced cheese on top then make into a sandwich with the remaining two slices of bread.  Heat the oil until hot enough to fry a cube of bread within one minute, meanwhile place one sandwich into the beaten egg, carefully turn over and coat the other side then place into the hot oil.  Fry over a high heat for about 2-3 minutes each side pressing down quite firmly with a spatular to get the heat through to melt the cheese.  The sandwiches are done when golden brown and the cheese is melted.
