It may be a bit boring and predictable but a home made quiche with a side salad and Jersey Royal new potatoes is an ultimate summertime feast for the two residents of Frugally Well.

We had salad to use up and some eggs from the pasta I made yesterday, Jersey Royal potatoes to finish from the weekend and I also had pastry dough that I'd made for the Regatta pie earlier in the week which I needed to use. Quiche and salad with JR new potatoes! It was obvious to me and I could make one big quiche which would provide enough for supper tonight and slices for lunches over the next couple of days.
I'm not posting a recipe tonight but will do in due course, I am however leaving you with an image of my gorgeous summertime supper tonight. I must confess to a teaspoon of Aldi mayonnaise, which is every bit as good as the 'H' brand, and to a further teaspoon of butter on my Jersey Royals, c'mon, it's a once a year thing for the JR's and butter is an essential element to their gorgeous taste :)

I will be making Paneer (Indian curd cheese) for the first time this week, could be a good thing or a bad thing, prawns on standby just in case ;) x
