Sunday roast rubber duck with Jersey Royal new potatoes and salad. Nine meals from one duck challenge.

Rubber duck for Sunday roast dinner

Whilst doing our weekly shop a few weeks ago we found a whole Greshingham duck YS to £5.04 from £7.49.

We nabbed it for the freezer immediately.

Frozen Gressingham duck with yellow sticker showing a reduction from £7.49 to £5.04.

Before I froze it I removed the giblets and froze them separately for meals for my raw fed dog and cat.  Sorry, that's a bit gross for a recipe page for non pet owners but it demonstrates they weren't wasted as we don't eat them.

On a Sunday we often have guests, our grown up children, this would be a good change from a chicken or mince based recipe.  The label said it would feed 3-4 people, that's crazy!  It's a huge duck, 2kg and in the Frugally Well household it will stretch to 7+ meals.

I had expected just my son, Himself and me for dinner, however my two daughters made a surprise visit too, so the duck has fed five so far, I had potatoes and salad, the others all had spinach, sweetcorn, mushrooms and peas with theirs.  Therefore the meal count for rubber duckie today stands at FIVE.

I still have the legs and carcass with plenty of meat for soup so will plan a leg each (2 meals = 7 total meals) and soup for two (= 9 meals) at some point.

That equates to 9 meals, mains and lunches, for £5.04 which costs per portion of meat only = £0.56p.

A shot of a salad with tomato, peashoots, avocado and cucumber, with new potatoes with butter melting on them and a slice of duck breast with crispy skin beside.
My delicious duck dinner
