BAT for breakfast

BAT, or bacon, avocado and tomato filled wholemeal pitta 


This morning I was looking for inspiration for breakfast, I'm not a cereal lover and like a substantial breakfast to see me through until lunchtime.  I scoured the fridge and found one and a half rashers of streaky bacon left over from the weekend breakfasts, half a tomato and half an avocado from yesterday's salad.

Himself hadn't made bread yesterday as we had visitors so there wasn't enough left for a sandwich.  I remembered I had a YS pack of wholemeal pittas in the freezer.  That was decided then, BAT pitta for breakfast.  A simple breakfast but so delicious.

I popped the bacon on to dry fry and placed the frozen pitta to one side of the pan to warm and defrost. Whilst the bacon was crisping I sliced the avocado and tomato and then it was a simple assembly job.  This was a two handed feast, the filled to bursting pitta bread was delicious and I'm glad I didn't leave the avocado and tomato another 24 hours or they would certainly be past their best.  

My boiler is now stoked for the next few hours and I feel energised and ready to begin some baking.  I have jam tarts on my mind today.
