Back in FW again, and married!

Due to life's little surprises I've not updated my blog since summer 2014, here we are in March 2015 and I'm newly married to Himself!

We visited Reykjavik in Iceland in November and whilst there went to see the Northern Lights on a cruise.  The lights were amazing! So beautiful.  Himself slipped off my glove whilst we watched and got down on one knee, he had the  sweetest ring for me and it was such a surprise as I thought I'd got myself a confirmed bachelor after all these years!  The romantic ol' bear had it planned for months apparently :)   With only three months to plan our wedding things have been hectic to say the least.


Now the dust is settling and we are getting used to being Mr and Mrs I plan to start blogging again.

I have just completed our meal plan for the week ahead (I run Monday to Sunday).

Monday:  Chili Cornbread pie with soured cream

Tuesday:  Buffalo wings, fries, coleslaw and corn on the cob

Wednesday:  Austrian Meatloaf, mash and veg from the freezer (a double batch so some for leftover day)

Thursday:  Polenta crust supreme of chicken stuffed with cheese, new potatoes and honey roast tomatoes. (I buy a whole chicken and remove the supreme then have the rest later, cheaper than buying breast fillets).  This is also nice as a crust for river cobbler which I would serve with the same accompaniments.

Friday: Sausage plait with baked beans, enough for two meals so I freeze half or we have it for lunch the next day

Saturday: Left over chili with rice and tortillas

Sunday:  The remains of the chicken that we had the supremes from on Thursday made into a carbonara or tetrazzini dish.
