Left over night again, chicken and smoked ham pie


I can get quite excited about left overs.


There's a challenge to making something as equally delicious as the initial dish but with the ready cooked produce and store cupboard staples.

We are saving hard for a few days away in November, we don't 'do' credit and save up for special things.  Our dream break is in Iceland to see the Northern Lights, geysers and lagoons and a whale watching tour where we will hopefully actually get to see whales in the wild.

We have been making a concerted effort to use up everything and not waste food, the food recycling bin is testament to that success and now contains bones, egg shells and peelings.

Last night I conducted a fridge and freezer raid and used up the remains of a chicken, the rest of the YS smoked ham, half a pack of frozen puff pastry from the freezer along with a handful of peas and sweetcorn and about half a tablespoon of dried sage and onion stuffing for my pie.  I made a rich chicken gravy with some chicken stock liquid and some Bisto, hey presto chicken and smoked ham pie.  Totally yummy and frugal too.

To my mind individual pies are the best when there are divided opinions about what's good to eat.  I made two individually tailored pies.

We will be living out of the freezer and well stocked store cupboard for a wee while now and I'm going to need my thinking cap on for yummy meals with equally tasty left over dishes in the following days.  Watch this space!
