left over chicken fajitas

Today I used up some of the leftover chicken from the previous day's meal with special sweet peas.

So quick to prepare, spicy and fragrant, delicious.




















Ingredients:

1 red pepper, sliced into four length ways (I used one from a jar in my fridge)
3 large tomatoes cut into large chunks
1 small onion very finely chopped
1 fat clove of garlic finely chopped
1 handful of fresh coriander
1 long chilli, deseeded and chopped finely
Half a tsp of sweet smoked paprika
1 cooked chicken breast, shredded
1tbsp olive oil for frying

Accompaniments:
Half an avocado, mashed
Soured cream
Flour tortillas
Salsa
Grated cheese

 Method:


First fry your onion for a couple of minutes taking care not to brown it, then in with the garlic and red pepper, continue cooking until the pepper softens (mine was already cooked so I skipped to the next stage).  Next put your tomatoes in with the coriander and sweet smoked paprika, mix well to combine and add the chicken.  When the chicken is warmed through (it must be piping hot) serve immediately in wraps with your favourite accompaniments.
